Stearic acid (a saturated fatty acid) and oleic acid (a heart-healthy monounsaturated fat) may play a role in those “good” HDL cholesterol changes. Beef has a heart-healthy blend of fats. Choose lean cuts (strip, sirloin, tenderloin, or T-bone steaks, and 95 percent lean ground beef) to control calories.
